Diabetes: konjac, zero calorie pasta, zero gluten!

Well known to the Japanese, this ingredient extracted from a plant swells in the stomach. Its surprising satiating power helps to regulate glycemia, cholesterol and improves transit.

Extracted from the roots of a Japanese plant nicknamed the devil's tongue (due to its red color), it doesn't get more satiating than konjak! Capable of absorbing more than 100 times its volume of water, it swells in the stomach, so you don't eat more than you need to. It exists in capsule form, but especially in the much more greedy form of pasta: shiratakis.

- What health effects?

Glycemic Index: zero, calories: zero and above all ultra-rich in a very special fiber (glucomannan), konjak once ingested attracts water but also a large part of the sugars and fats in the meal. It thus forms in the stomach a kind of magma that the body is unable to assimilate and evacuates all the more easily as the konjak is also a champion in the fight against constipation. Naturally, this little genius of detox thus regulates blood sugar, cholesterol and triglycerides but also transit.

- How to use it?

In the form of shiratakis, konjak is as effective as it is delicious. In terms of taste, this calorie-free, gluten-free pasta is akin to transparent Asian vermicelli, served in soups. In terms of preparation, nothing could be simpler: just open the package, rinse the shiratakis, cook them (1min in simmering water) and throw them in a pan of vegetables, a bolognese sauce, pestou, a soup, a tomato salad ... anything goes as soon as the konjak is cooked.

What precautions?

You can consume a maximum of one serving per day. But medical advice is desirable in the event of drug treatment.

Where to find it: in supermarkets, organic and Asian stores. Konjak is also available as a chopping block as desired, with the same flavor as shirataki pasta.
